Chicken and Golden Pin Mushrooms Soup 金针菇鸡汤


Ingredients A :

10g Yu Zhu

1tbsp Qi Zi (Chinese Wolfberry)

8 Red Dates

1200ml Water


Ingredients B :

200g Chicken Breast Meat, sliced

1packet Golden Pin Mushroom, cleaned


1/2tsp Salt

A little Pepper

1stalk Spring Onion, cut into strips


Method :

1. Put ingredients A into a pot and bring to boil over high heat. Lower the heat and cook for 30 minutes.

2. Add chicken, golden pin mushrooms and cook for 10 minutes.

3. Add salt and pepper to taste. Lastly add in spring onion. Dish up and taste.

Dried Scallop and Chicken Soup 干贝乌鸡汤

Ingredients :

1 Black Skinned Chicken, remove skin

200g Lean Meat

10 Red Dates

2 Dried Scallops

2tbsp Wolfberries

5slices Ginger

50g Dried Longan


Seasonings :

Sea Salt and Pepper to taste


Method :

1. Scald chicken in boiling water for 10 minutes, remove and rinse with water.

2. Boil 4 litres of water in a pot, add in all ingredients. Bring to boil.

3. Turn to low heat and cook for 5 hours, stir in seasonings and serve hot.


Tip : soak the dried scallops in hot water until they soften before adding to soup to enhance the flavor.


Function :

Black Chicken – is rich in black pigment, protein, B complex, amino acid and trace elements. It is effective in nourishing the liver and replenishes bloods, expels heat, regulates menstruation. It is an ideal ingredient to cook as it tastes fresh and sweet.

Ingredients:

2 Chicken Whole Legs, deboned

2cups Oil for deep-frying

1 Fresh Orange, peeled and cubed

Marinade:

1/2tsp Salt

1 Egg White

Dash of Sesame Oil and Pepper

1tsp Custard Powder

2tbsp Corn Flour


Sauce:

200ml Packet Orange Juice

1/2tbsp Sugar

1tsp Corn Flour


Method:

1. Mix chicken with marinade and marinate for 1 hour.

2. Heat up oil, deep-fry chicken until both sides are golden brown and cooked. Dish and drain. Cut into pieces and arrange onto a serving plate.

3. Leave 1 tbsp oil in wok, ad fresh orange and stir well. Add in sauce and cook until thick. Pour the sauce over the chicken and serve.

Banana and candied fruits loaf









You need -

  • All purpose flour – 2 cups

  • Caster sugar – 2/3 cup

  • Baking soda – 1/2 teaspoon

  • Baking powder – 1 teaspoon

  • Salt – 1/4 teaspoon

  • Mashed ripe bananas – 1 cup ( I used 2 & 1/2 bananas)

  • Candied fruits – 1 cup

  • Roughly chopped almonds – 3 tablespoons

  • Egg – 2

  • Melted butter – 1/3 cup

  • Milk – 3 tablespoons

  • Vanilla extract – 1 teaspoon





How to -



Pre-heat the oven to 180 C. Grease a 9x5 loaf pan.


In a bowl sift together the flour, baking powder, baking soda and salt. Add the almonds, candied fruits to flour mixture and mix well to coat. Set aside.



In a mixing bowl beat the sugar, egg and butter until well combined. Stir the banana, milk and vanilla essence. Now slowly add the flour-candied fruits mixture to the wet ingredients and stir with a wooden spoon till everything is just blend.



Spoon the batter into the greased loaf pan and bake for 50-60 minutes or till the toothpick comes out clean when inserted in the middle of the loaf.


Cool the loaf for 10 minutes in pan and then on a wire rack.

TOASTED WALNUT TRUFFLES

This is a good recipe when you really want a little special treat. This makes around 30 truffles. You should only eat a couple a day.

1 cup walnuts, finely chopped

2 cups sugar-free chocolate chips

1 cup fat-free evaporated milk

2 tsp vanilla extract


Preheat oven to 350 degrees.


Spread walnuts in a single layer on a cookie sheet. Bake walnuts, stirring once or twice during baking, until lightly browned and fragrant. This should take approximately 10 minutes. Remove from oven and set aside.


Measure chocolate chips into a heat-proof bowl and set aside.


In a small, heavy saucepan bring the evaporated milk to a boil over medium heat; pour over the chocolate. Add the vanilla extract and let sit for 2 minutes then stir until smooth.


Cool at room temperature then refrigerate two hours.


Remove from refrigerator and working with a teaspoonful at a time, form into balls by quickly rolling in hands. Place balls on a parchment-lined baking sheet. Store balls in refrigerator overnight.


Roll truffles in the toasted chopped walnuts.


Should be kept stored in refrigerator in an airtight container.

Oatmeal Toast 燕麦吐司

Oatmeal Toast 燕麦吐司

分量:12两吐司模(20cm x 10cm x 10cm)


材料:

A. 燕麦糊

50g 即食燕麦片

150cc 冷水


B. 主面团

燕麦糊全部

250g高筋面粉

30g 全麦面粉

3/4tsp 速发干酵母

20g 细砂糖

1/4tsp 盐

20g 橄榄油

80cc 冷水


C. 表面装饰

蛋白液,即食燕麦片各适量


做法:

A. 制作燕麦糊

1. 将冷水加入到即食燕麦片。

2. 放上瓦斯炉小火边煮边搅拌至沸腾。

3. 盖上盖子焖15分钟。

4. 时间到打开盖子再搅拌均匀成为团状。


B. 制作主面团

5. 将所有材料B倒入钢盆中搅拌搓揉成为一个不黏手的面团( 液体的部分要先保留30cc,在面团已经搅拌成团后再慢 慢加入)。

6. 依照揉面标准程序继续搓揉甩打,成为撑得起薄膜的面团。

7. 将揉好的面团滚圆,收口朝下捏紧放入抹少许油的盆中。

8. 在面团表面喷一些水,罩上拧干的湿布或保鲜膜,放置到温 暖密闭的空间发酵约60分钟至两倍大。

9. 桌上洒上一些高筋面粉,将发好的面团移出,面团表面也洒 上一些高筋面粉。

10. 将第一次发酵完成的面团空气拍出,平均分割成2等份(每 块约300g), 然后滚成圆形,盖上拧干的湿布再让面团休息15分钟。

11. 休息好的面团擀成长形后翻面,由短向卷起,盖上拧干的湿 布再让面团休息15分钟。

12. 再将休息好的面团用擀面棍擀成长条(约35cm),宽度 同烤盒短向宽,然后由短向卷起(卷起的时候不要太紧,轻 轻往前自然卷起就可以)。

13. 将卷好的面团收口朝下朝内间隔适当排入吐司烤模中(若不 是不沾烤盒,请刷上一层不可融化的奶油避免沾粘)。

14. 用手稍微轻轻压一下使得两团面团高度平均。

15. 在面团表面喷些水,放在温暖密闭空间中再发酵50~60 分钟。

16. 面团约发酵到九分满时,将烤箱打开预热至170℃。

17. 进烤箱前在表面轻轻刷上一层蛋白液。

18. 在面团表面洒上即食燕麦片。

19. 放入已经预热到170℃的烤箱中烘烤35~38分钟。

20. 烤好后马上倒扣出来放在铁网架上放凉。
