BEEF AND ZUCCHINI CASSEROLE
1 small onion, diced
1/4 cup butter, melted
1 small green bell pepper, chopped
1/8 tsp freshly ground black pepper
1 can low-fat cream of mushroom soup
2 medium-size zucchini, sliced thin
1/2 tsp salt
Preheat oven to 375 degrees.
Lightly butter a 2-quart casserole dish; set aside.
In a skillet, cook the ground beef with the onion until the beef is browned; drain well.
Combine the drained beef/onion mixture with the remaining ingredients, mixing well. Transfer mixture to the prepared casserole dish.
Bake at 375 degrees for 30 to 45 minutes.

MIXED POT O' BEANS
1/2 lb dried black beans
1/2 lb dried red kidney beans
14 cups water
6 cups chopped onion, divided
10 whole garlic cloves
3 bacon slices, cut into 1-inch pieces
3 chicken bouillon cubes
3 tbsp chili powder
1 tbsp salt
2 tsp freshly ground black pepper
3/4 tsp ground red pepper
In a large Dutch oven, combine the beans; cover with enough water to cover by 3-inches. Allow beans to soak overnight or 8 hours; drain.

CHICKEN AND SPINACH SKILLET
1 can (14.5-oz) diced tomatoes, drained
1/4 cup sun dried tomato vinaigrette dressing
2 tsp olive or canola oil
8 cups baby spinach leaves
2 cups hot cooked long-grain brown rice
Pound each chicken breast down to a 1/4-inch thickness.
Combine the tomatoes and 3 tablespoons of the vinaigrette dressing.
Heat the oil in a large nonstick skillet over medium-high heat; add chicken and cook 3 minutes per side, or until done. Drizzle the remaining dressing over the chicken during the last minute of cooking. Transfer chicken to a warm platter and keep warm.
Add the tomato mixture to the skillet and bring just to a boil, stirring often. Add the spinach and cook on medium heat just until it starts to wilt. Stir constantly during cooking.
To serve, spoon the spinach mixture over the chicken and serve with the rice.

Herbal Old Chicken with Dried Top Shell Meat Soup 玉竹老鸡响螺汤 |
Ingredients:
1 Old Chicken, cleaned and removed skin
2pieces Dried Top Shell Meat, soaked until soft and cut into pieces 响螺干/干鲍片
50g Yu Zu (20g)
8 Red Dates
1tbsp Qi Zi
3slices Ginger
2500ml Water (1000ml)
Salt to taste
Method:
1. Blanch old chicken in boiling water for 5 minutes. Dish up and clean, drain well.
2. Put all ingredients into a stock pot and bring to boil. Lower the heat and simmer for 2 hours. Add salt to taste. Serve hot.
Note: Dried Top Shell Meat has to be cleaned and soaked in hot water for ½ hour to soften before using.
