Herbal Old Chicken with Dried Top Shell Meat Soup 玉竹老鸡响螺汤

Herbal Old Chicken with Dried Top Shell Meat Soup 玉竹老鸡响螺汤

Ingredients:

1 Old Chicken, cleaned and removed skin

2pieces Dried Top Shell Meat, soaked until soft and cut into pieces 响螺干/干鲍片

50g Yu Zu (20g)

8 Red Dates

1tbsp Qi Zi

3slices Ginger

2500ml Water (1000ml)

Salt to taste


Method:

1. Blanch old chicken in boiling water for 5 minutes. Dish up and clean, drain well.

2. Put all ingredients into a stock pot and bring to boil. Lower the heat and simmer for 2 hours. Add salt to taste. Serve hot.


Note: Dried Top Shell Meat has to be cleaned and soaked in hot water for ½ hour to soften before using.
